[Dinner]
Dinner features a hot pot dish crafted from Satoyama Jujo’s original recipe. For guests staying in “SEN” or “KIROKU – The Priest’s House,” BBQ in your private garden is available during the green season. Please choose your preferred meal at the time of booking. Our staff will come to your room to prepare the meal, and then you may enjoy it at your own pace.
■ BBQ
We prepare everything from lighting the fire to pre-meal setup. Dishes include local specialties like karashinamasu, as well as Satoyama Jujo’s original recipes such as paella and ajillo. “SEN” features a roofed area, making BBQ possible even in rainy weather.
Note: Not available for guests staying in “IZUMI” or “VILLA.”

■ Joya-nabe (Hot Pot)
Our version of the classic pork shabu-shabu in sake, praised by Rosanjin for being enjoyable “all night long without getting bored.” Includes 250g of pork per person. The alcohol in the sake is boiled off, so it’s safe for children. A popular option at Satoyama Jujo.
■ Niigata Wagyu Shabu-shabu
A5-grade Niigata Wagyu, aged in a snow cellar, served as shabu-shabu. 200g per person (4–5 slices). Additional portions can be pre-ordered.
■ Herbal Hot Pot
A unique hot pot enjoyed by staff during special occasions such as welcome/farewell parties. Made with extracts from local mountain plants, dried herbs, and homemade fermented seasonings. Slightly spicy and full of deep, mature flavors.
[Breakfast]
We deliver a “Rice Breakfast Course” to your villa.
Enjoy freshly cooked, glossy Uonuma-grown Koshihikari rice (locally sourced), and miso soup made to your taste with seasonal vegetables and miso. A heartwarming experience, like returning to your countryside roots.
From your second night onward, a simple Western-style breakfast can be arranged. Please consult the concierge desk.

Dinner is prepared by a female chef who studied Ayurveda in Australia and is dedicated to creating cuisine that connects food and health.
The restaurant has been awarded one Michelin star in the "Michelin Guide Niigata 2020" and received 3 toques in "Gault & Millau 2021."
Satoyama Jujo’s concept of Local Gastronomy expresses the unique climate, culture, and history of the region.
In our fermentation room, we make miso and fermented seasonings, as well as pickles and even ham.
Experience the "fermentation and preserved food culture of snowy regions," reimagined with a modern twist.

Breakfast will be delivered to your villa in the form of a "Rice Course."
